Asian Cajun Recipes That’ll Set Your Tastebuds on Fire

One-Pan Creole Fried Rice
There's all kinds of fried rice dishes to test and this quick and simple Creole fried rice must be added to the list! On the plus side, your equipment usage can be reduced to just one pan. This recipe provides all kinds of proteins with chicken and smoked sausage tossed in Creole seasoning, and a spice blend of peppers, cayenne, paprika, and thyme.

Ingredients:

  • 1 cup uncooked long-grain rice
  • 2 cups chicken broth
  • 1 lb. chicken thighs, skinned and boned
  • 1 1/2 tsp. Creole seasoning, divided
  • 2 tbsps. vegetable oil
  • 1/2 lb. andouille or smoked sausage, sliced
  • 1/2 small onion, chopped
  • 1/2 small green bell pepper, chopped (1-2 cups of frozen peas, carrots and corn can also be used)
  • 2 garlic cloves, chopped
  • 3 plum tomatoes, chopped
  • 2 green onions, sliced (green part only)
  • cilantro, adjust to taste or use as garnish

Directions:

Cook rice according to packaging direction, using chicken broth instead of water. Once cooked, spread rice in a thin layer on a baking sheet and allow to cool. Cut chicken into 1 inch pieces and toss with 1 teaspoon of Creole seasoning. Next, take a large skillet and cook chicken over medium heat for 3 minutes. Then add sausage and cook until lightly browned or for an additional 3 to 4 minutes. Add onion, bell pepper (or other vegetables) garlic, and remaining Creole seasoning to the skillet and cook for 5 minutes or until onion is tender. Next add rice to the mixture and cook on high heat, stirring constantly for 4 minutes or until the batch is fully heated. Upon serving, sprinkle green onion and cilantro on top then serve!
