Jerusalem artichokes, or sunchokes, are a bit of a misnomer. They’re not part of the artichoke family, and they don’t look or taste like regular artichokes - they are more starchy like potatoes. They have many benefits, including lots of potassium and fiber, and they’re aid with digestion. You can slice and eat them raw and crunchy or shred them into a slaw.
