Since most Americans do not eat the recommended amount of vegetables, try this easy tip to increase your servings! Take an hour on the weekend to slice up a variety of your favorite vegetables. Drizzle them with olive oil, salt and fresh pepper, and roast a few baking tray’s worth in the oven at 350°F.  Try to cook enough so that you can have multiple veggie servings a day through the middle of the week.  This way eating your veggies doesn't have to involve more time spent cooking. Store the mixed vegetables in containers for lunch or dinner, and reheat as needed.
