Strawberry Muffins

Fresh strawberries, raisins, cinnamon and sugar make these a healthy snack that kids will love.


* 4 eggs
* 1 1/2 C. sugar
* 2 C. fresh strawberries, halved
* 1 1/2 C. raisins
* 1/2 C. butter, melted
* 3 C. all-purpose flour
* 1 1/2 tsp. baking powder
* 1/2 tsp. salt
* 3/4 tsp. cinnamon


Preheat oven to 350 degrees. Grease and flour muffin tins or line with papers. In a bowl, combine eggs, sugar, strawberries, raisins and butter. Stir together flour, baking powder, salt and cinnamon. Stir dry ingredients into strawberry mixture until just moistened; batter will be thick - do not over-mix. Divide batter evenly into muffin cups. Bake for approximately 20-25 minutes or until a toothpick inserted in the center comes out clean and dry. Remove from oven and allow to cool in pan for 10 minutes before turning out.

Yield: 24 muffins
