Baked Cauliflower PDF Print E-mail
This is healthy, baked side that you can serve with pork chops or other main course. It's a got a unique taste!

Ingredients

* 2 med. cauliflower
* 1/2 C. olive oil
* salt
* pepper
* 1 sm. onion, finely chopped
* 1 8-oz. can tomato sauce
* 1 tsp. tomato paste, dissolved in 1/4 C. water
* 1 C. water
* 3 whole cloves
* 3 whole allspice berries or 1 cinnamon stick

Directions

Preheat oven to 400 degrees. Remove leaves and core from cauliflowers. Cut each head into four pieces or leave whole. Rinse well with cold running water and dry with paper towels. In 6-qt. saucepan, saute cauliflower pieces in hot oil over medium heat until pale golden brown on all sides. Transfer to a 9x13-inch baking pan or oven-proof dish. Sprinkle lightly with salt and set aside.

Add remaining oil and chopped onions to same pot and cook until tender. Stir in tomato sauce and paste. Cook 2 minutes. Add water, spices, salt and pepper. Bring to boil over medium heat and simmer 5 minutes. Spoon sauce over cauliflower and cover with aluminum foil. Bake 40 minutes or until desired doneness. Remove from oven and uncover immediately.
