Braised String Beans PDF Print E-mail
You can add zucchini wedges and tiny potatoes to this dish if you're a little hungrier.

Time needed
60-90 minutes cooking

Ingredients

* 2 lbs. fresh green beans
* 1/2 C. olive oil
* 2 med. onions, chopped
* 1 8-oz. can tomato sauce
* 1/2 C. fresh parsley, chopped
* salt
* pepper
* 2 C. hot water

Directions

Rinse whole beans with cold water. Snap off ends and cut in half if desired. Heat oil in 6-qt. pot and cook onion until tender. Stir in tomato sauce or chopped tomatoes, parsley, salt and pepper. Simmer for 5 minutes. Add water, bring to boil and add the beans. Cover and cook over low heat for 40 minutes or until beans are soft and a thick sauce remains.
