Use store-bought chili sauce to make this meal quick.
Ingredients
* 4 boneless, skinless chicken breast halves (6 to 8 oz. each) * salt and pepper * 1/4 C. Asian-style sweet chili sauce (tomato-based) * 2 Tbs. fresh lime juice, plus lime wedges for serving * 1/2 English cucumber, halved lengthwise, seeded and cut into matchsticks * 1 red onion, halved and thinly sliced * 1 yellow bell pepper, thinly sliced * fresh mint leaves * 1 head Boston lettuce, leaves separated
Directions
Place chicken in a shallow 2-quart microwave-safe dish with a lid; season with salt and pepper. Cover and microwave on high until chicken is just opaque throughout, 6 to 8 minutes, turning halfway through; drain. Remove chicken from dish; slice crosswise. Using two forks, shred chicken into bite-size pieces. Return to dish; toss with chili sauce and lime juice, and season with salt and pepper. Arrange chicken, cucumber, onion, bell pepper, mint, lettuce and lime wedges on a serving platter. Invite guests to assemble their own wraps and to squeeze lime juice over the filling.
