Broiled Fish with Orange Mint Sauce PDF Print E-mail

Use any white fish, such as cod, red snapper, or halibut in this recipe.

Ingredients

* two 6-oz. firm white fish fillets
* 1/4 C. fresh orange juice
* 2 Tbs. fresh mint, chopped
* 1 clove garlic, pressed
* 1 tsp. olive oil
* 1 tsp. balsamic vinegar
* 1 pinch cayenne pepper
* 1/4 tsp. salt
* freshly ground pepper, to taste

Directions

Combine orange juice, mint, garlic, vinegar, olive oil, and cayenne pepper.  Pour over fish and let marinate for 15 minutes.  Heat broiler or grill. Remove fish from marinade and sprinkle with salt and pepper.  Bring marinade to a boil in a small saucepan.  Cook at boil 4-5 minutes.  Broil or grill fish for about 5 minutes.  Baste with the marinade and continue to cook for 2 more minutes.  Serve fish with remaining boiled marinade.
