Banana Chocolate Chip Muffins PDF Print E-mail
Using Miracle Whip keeps these muffins low in fat and high in flavor.

Ingredients
■1 C. Miracle Whip or Miracle Whip Light Dressing
■1 C. sugar
■2 large ripe bananas, well mashed
■2 C. flour
■2 tsp. baking soda
■1/2 C. mini semi-sweet chocolate chips


Directions

Heat oven to 350 degrees. Mix dressing and sugar. Add bananas, combine flour and baking soda and chips; mix until just moistened. Spoon batter into greased or paper-lined muffin pan, filling each cup 2/3 C. full. Bake 15 minutes.

Yield: 12 muffins

I made the banana choc chip muffins twice, exactly as stated. Both times the tops caved in and they were gooey inside. So, I put them in ramekins and put whip cream on top. They were great, but what is wrong?
