Fresh and Fruity Salad PDF Print E-mail

This is a wonderfully flavorful salad that has a combination of antioxidants and fiber.  Packed with vitamin C, the mint and pineapple helps with digestion.  This is a sweet and light dessert that can be eaten for breakfast, lunch, dinner, or as a snack

2 Tbs. fresh mint, chopped
1 Tbs. lemon zest
1 Tbs. lime zest
juice of 1 orange
juice of 1 lemon
juice of 1 lime
1/4 C. Turbinado sugar
1 C. fresh raspberries
1 C. peaches, cut into chunks
2 kiwis, cut into chunks
1 clementine or tangerine, peeled and broken into wedges
1 C. strawberries, cut into chunks
1 C. blueberries
1 C. pineapple, cut into chunks

In a small bowl, whisk the fresh mint, lime zest, lemon zest, lemon juice, orange juice, lime juice and turbinado sugar. In a large bowl, mix together raspberries, peaches, kiwis, clementines, strawberries, blueberries and pineapples. Pour the fruit juice dressing over the fruit and refrigerate one hour, or until ready to serve.
