This is something I tried for my kids on a rainy, stay inside, watch a movie afternoon. It just came out so good, it has become a family tradition. Even though its not raining!
Ingredients * 2 pkgs. Philadelphia low fat cream cheese, softened * 1 can cooked chicken chunks * 1/2 sm. can red pimento * 1 tsp. water of the pimiento * 1 1/2 C. corn flakes Directions Crush the corn flakes in a resealable bag, put aside. Chop the pimientos to tiny pieces, really tiny pieces. Separate the chicken chunks until threaded. Mix all the ingredients, except the corn flakes and put in the freezer for 10 minutes or until very firm to manage. Once firm, make mini balls of the mixture. One by one, put each ball in the corn flakes and shake softly to cover. Place once again in the freezer for 5 minutes if not really soft. If so, let freeze for an additional 5 minutes.
