| Lots of Chicken Soup |

My soup soothes the soul and whatever else ails you. Whenever my 2 daughters or granddaughter are not feeling well, I make them a pot of my soup and some how it makes them feel better.
Ingredients * 2 Tbs. olive oil * 1 large onion, diced * 4 carrots, chopped * 4 stalks celery, chopped * 1 whole stewing chicken * 4 C. low salt low fat chicken broth * 2 bay leaves * 1 C. ditalini pasta * Salt and pepper to taste * Parmesan cheese (optional) Directions In large pot in hot olive oil, fry all vegetables together. Add chicken broth, whole chicken and bay leaves. Simmer for 1 hour. Remove meat from bones and place back in pot. Add ditalini and cook until tender. Add salt and pepper to taste.
