Many Bean Salad PDF Print E-mail
A wonderful, flavorful and easy bean salad recipe that has been in my family for 4 generations. Even the children like this one! This will be a family favorite for years to come. Refreshing in the summer and a nice break from cooked veggies in the winter.

Ingredients

* 1 can green beans
* 1 can garbanzos (chick peas)
* 1 can white beans (piquenos)
* 1 can yellow wax beans
* 1 can small kidney beans
* 1 can small black beans
* 1 sm. yellow bell pepper, largely chopped
* 1 sm. green pepper, largely chopped
* 1 lg. Texas Sweet onion (or red onion)
* 1 C. vegetable oil
* 1/2 C. high grade olive oil
* 3/4 C. salad vinegar
* 1/2 - 3/4 C. sugar (can use Splenda)
* salt & pepper to taste

Directions

In large bowl, pour all beans (after draining) and add largely chopped bell peppers and onion (can be chopped or put into slices - your choice). In small bowl, add all liquids with sugar, salt and pepper. Sample to reach desired sweetness and saltiness.

Pour over vegetables and marinade overnight. Will last about 2 weeks in refrigerator.
