| Garden Veggie Casserole |

You may use any variety of your favorite vegetables for this garden veggie casserole recipe and this may be frozen for later use as well. Very easy and tasty!
Ingredients * 1 1/2 C. chopped zucchini * 1 C. chopped yellow summer squash * 1 C. chopped tomato * 1 med. chopped onion * 1/3 C. grated parmesan cheese * 1 C. shredded mozzarella cheese * 1 1/2 C. milk * 3/4 C. baking mix * 3 whole eggs * 3/4 tsp. salt * 1/2 tsp. pepper Directions Heat oven to 400 degrees. Lightly grease 13x9-inch baking dish. Sprinkle zucchini, yellow squash, tomato, onion and cheeses evenly in baking dish. Beat remaining ingredients in blender at high speed for 15 seconds or with a hand beater for 1 minute or until smooth. Pour evenly in dish.
