Melon Ice PDF Print E-mail

This delicious appetizer uses a honeydew melon, ginger and fructose instead of sugar. Great for diabetics!

Ingredients


* 1 lg. rip honeydew melon, seeded, peeled and chopped (about 8 cups)
* 2 C. water
* 1/3 C. powdered fructose or 23 packets powdered fructose
* 1 tsp. ground ginger

Directions

In a large bowl, combine melon, water, fructose and ginger. Place melon mixture in a food processor or blender, one portion at a time. Cover and process or blend until smooth.
Pour melon mixture into a 13X9X2-inch baking pan; cover with foil. Freeze about 4 hours or until almost firm. Break the mixture into small chunks; transfer to a chilled, large bowl. Beat with an electric mixer until slushy. Return mixture to pan. Cover; freeze at least 4 hours more.
Before serving, let stand at room temperature about 5 minutes.
