Double Berry and Honey Yogurt Parfait

Simple, healthy, and totally delicious! This Valentine's Day, swap out your ice cream dessert for this healthy fruit and yogurt parfait! The strawberries and raspberries in this recipe give the dessert a beautiful red and white pattern, making it perfect for February 14th!

Ingredients:

  • 1 1/2 cup plain non-fat Greek yogurt
  • 1/2 cup skim milk
  • 1/4 cup chia seeds
  • 1 tsp. vanilla extract
  • salt
  • 3 tbsp. toasted coconut flakes
  • 3 tbsp. honey
  • 1/4 cup strawberries, washed and halved
  • 1/4 cup raspberries, washed

Directions:

  1. In a medium-sized bowl, whisk 1 cup Greek yogurt, skim milk, and 2 tablespoons of honey. Whisk in the chia seeds, and cover. Let the mixture chill in the refrigerator overnight.
  2. In a small bowl, combine 1 tbsp. honey with the strawberries and mash.
  3. Pour the chia mixture into serving dishes.
  4. Next, spoon the honey and berry mixture on top, and then the remaining Greek yogurt.
  5. Top your parfaits with fresh raspberries and toasted coconut pieces.
