Sweet And Sour Citrus Stir-Fry

A delicious stir fry is the perfect way to get a major dose of vegetables with every delectable bite. This sweet and sour stir fry is kept fresh with oranges and lime, and abundant in chunks of chicken and delicious vegetables. Minced garlic and ginger give a natural bite that flavors the entire dish with pungent notes. Serve with more vegetables or a bed of barley rice.

Ingredients:

  • 2/3 cup orange juice
  • 2 tbsp. fresh lime juice
  • 2 tsp. lime zest
  • 2 tbsp. rice vinegar
  • 2 tbsp. brown sugar
  • 3 tbsp. soy sauce
  • 5 garlic cloves, minced
  • 2 tsp. fresh ginger, minced
  • 1 lb. boneless, skinless chicken breasts, 1 inch chunks
  • 3 tbsp. corn starch
  • 1 1/2 cups broccoli florets
  • 1 1/2 cups snow snap beans
  • 1 orange bell pepper, seeded and sliced
  • 1 small red onion, 1/4 inch slices

Directions:

In a medium saucepan, combine orange juice, lime juice, zest, vinegar, sugar, soy sauce, garlic, and ginger. Over medium-high heat, bring to a boil to cook for 5 minutes. Transfer to a heatproof container and put aside. Season chicken with salt and pepper to taste and dredge in cornstarch. In a large skillet, heat 1 tablespoon of oil over medium-high heat. Cook chicken for 4-5 minutes and add onions, broccoli, beans, peppers, and onion. Cook until crispy and tender, then add in sauce 1 tablespoon at a time with 10 seconds in between. Serve with rice.
