Fresh Lamb Lettuce Wraps

Lamb is already a rich meat on its own, but flavored with fresh garlic, parsley and spices, it is a truly sinful experience. Ingredients:

  • 2 tsp. canola oil
  • 1 cup onion, finely chopped
  • 2 tsp. minced fresh garlic
  • 1 tsp. ground cinnamon
  • 6 oz. lean ground lamb
  • 1/2 cup parsley, chopped
  • 1/2 cup tomato, diced
  • 1/2 cup cucumber, diced
  • 1/4 cup plain Greek yogurt
  • 1/4 cup red pepper hummus
  • 8 Boston lettuce leaves
  • Salt and pepper to taste

Directions:

In a large skillet heat oil over medium-high heat. Cook onions, garlic, cinnamon and lamb until lamb is cooked, about 5 minutes. Combine parsley, tomato, and cucumber in a bowl. Add in lamb. In a separate bowl mix yogurt and hummus together. Spoon 1/4 cup up lamb mixture onto each lettuce leaf. Top with hummus or use for dipping on the side.
