Sausage and Cranberry Stuffing

This flavorful stuffing is bound to become a family favorite. It has it all – chicken sausage, cranberries, celery, and onions. Give your stuffing recipe an update by trying this delicious and easy recipe.


  • 16 C sourdough bread crumbs
  • 1 stick margarine
  • 2 C onion, diced
  • 1 C diced celery
  • 2 T parsley
  • ¾ lb. chicken sausage
  • 1 C chicken stock
  • 1 C cranberries
  • Salt and pepper, to taste


First, preheat the oven to 300 degrees. Pour the breadcrumbs into a large mixing bowl and set aside.

In a sauté pan, cook the onions, celery, parsley, salt, and pepper in margarine for about 10 minutes, or until the vegetables are soft and cooked through. In the same sauté pan, cook the chicken sausage in a pan for about 10 minutes, until the outside is brown and the sausage is cooked through. While cooking, break up the sausage with a fork. Add in the chicken stock and cranberries and cook until everything is well combined. Add in the sausage mixture to the breadcrumbs and mix. Pour the stuffing into a greased baking sheet and bake for 30 minutes, or until the top of the stuffing.
