Rice Stuffing With Mushrooms And Onions

This hearty stuffing recipe has loads of earthy flavor, thanks to the mushrooms and rice. The savory taste of this stuffing will complement your Thanksgiving turkey and other side dishes.


  • 1 stick margarine 
  • 2 onions, chopped
  • 1 lb. mushrooms, sliced
  • 3 T fresh thyme
  • 5 C chicken broth
  • 3 C rice (you can use whatever variety you like)
  • ¾ C parsley


Melt about four tablespoons of the margarine in a skillet over medium heat. Add the onions and sauté until they’re translucent, about 15 minutes. After the onions are done cooking, transfer them to a bowl. Melt the remaining margarine in the same pan and cook the mushrooms and one tablespoon of thyme. Cook mushrooms for about 15 minutes, until they’re soft and brown. Combine the mushrooms with the onions in a bowl, seasoning with salt and pepper.

Next, bring the chicken broth and a tablespoon of thyme to a boil in a large pot. Add in the rice and simmer for 30 minutes, reducing the heat. Once the rice has absorbed the liquid, add in the onions and mushrooms. Add in the remaining thyme. Cook for another 5 minutes and season with salt, pepper, and parsley before serving.
