Green Goddess Grilled Cheese

Add some green to your grilled cheese with this delicious Green Goddess recipe! Made with a homemade pesto spread, fresh spinach, avocado, and mozzarella cheese, these slices are nothing but divine!

Serve: 1 / Prep: 15 mins. / Cook: 10 mins.

Ingredients:

  • 2 slices whole-grain bread
  • 1 avocado, cut into slices
  • 1 handful fresh spinach leaves, washed
  • 1 slice mozzarella cheese, cut into large chunks
  • 2 tbs. margarine or unsalted butter
  • For the Herb Pesto:
  • 1 clove fresh garlic
  • ½ teaspoon anchovy paste
  • 1 tablespoon chopped shallot
  • 1 teaspoon lemon juice
  • 1 tablespoon Italian parsley
  • Handful chopped kale
  • 1 tablespoon dried tarragon
  • 1 tablespoon chopped chives
  • ½ cup extra virgin olive oil
  • Salt and pepper


Directions:

  1. In a food processor, combine the garlic, anchovy paste, and shallot and pulse until well chopped. Add the lemon juice, parsley, kale, chives, and dried tarragon while the processor is pulsing to well combine. Next, evenly pour in the extra virgin olive oil into the mix while the food processor is still running. This will give you a smooth texture perfect for spreading on the bread.
  2. Coat a medium skillet with 2 tbs. olive oil, then put on the stove at medium heat. Butter both sides of the whole wheat bread, then spread 1 tablespoon of pesto on the inside of each slice. Next, pile on the mozzarella cheese, spinach, and avocado slices to build your sandwich. Top with the slice, and grill sandwich on each side until the cheese is melted.
  3. Slice sandwich in half and enjoy!
