Cauliflower Crust Grilled Cheese Sandwich

  • 1/3 cup cheddar cheese, shredded
  • For the Crust:
  • 3 cups cauliflower rice
  • 1 egg, beaten
  • ½ cup mozzarella cheese
  • ½ tsp. Sea salt
  • ¼ tsp. black pepper
  • 2 tbs. margarine or unsalted butter


  1. Preheat the oven to 450 degrees F, and line a sheet pan with greased parchment paper. Set aside.
  2. To dehydrate the cauliflower rice, microwave in a bowl for about 8 minutes, then drain with a tea cloth. Combine the rice, egg, salt, pepper, and mozzarella cheese in a bowl and mix until the dough is well combined.
  3. Next, shape the cauliflower dough into four squares to form the crust slices, and bake for approximately 15 minutes, or until golden-brown. When the slices are baked, let them cool for 8-10 minutes.
  4. When the bread is cooled, warm a skillet on medium heat. Butter the outsides of the cauliflower crust, and assemble the grilled cheese sandwich with the shredded cheddar cheese. Grill each side for about 3 minutes, until the sandwich is golden brown and the cheese has melted.
  5. Slice sandwiches in half and enjoy!
