Skinny Crockpot Buffalo Chicken Salad

It’s a shame that some salads are loaded with fat! One minute you think you’re being healthy, and the next you're wondering why your pants are feeling tighter than usual. If you're ready for a salad recipe that you will actually enjoy without feeling guilty, we've got what you're looking for! This salad is extremely easy to make and it will put your dusty crockpot to good use! Follow this simple recipe for a tasty and filling meal.

Ingredients:

  •  4 chicken breasts
  • ¼ cup buffalo sauce
  • 3 spoonful’s of Greek yogurt
  • 2 sliced avocados
  • Cheese of your choice (optional if you want to be extra healthy)
  • 1 cucumber- sliced
  • 1 stalk of celery- sliced
  • Lettuce
  • 1 can black beans
  • 1 tomato- sliced
  • Non-stick spray (for the crockpot)

Directions:

Grease your crockpot with non-stick spray. Place the cleaned chicken in the crockpot on low for 4 hours. Then mix in the buffalo sauce and Greek yogurt. Once the chicken has finished cooking, shred it with a fork. Next mix the chicken in a medium sized bowl with all the other ingredients and enjoy!
