Meatless Summer Stir-Fry

Cashew And Snow Pea Stir-Fry

This cashew and snow pea stir-fry only has 90 calories per serving! This healthy recipe also has no added sugars, and is the perfect date-night meal!

Servings:  4

Ingredients:

  • 3 cups snow peas, trimmed
  • 3 tbsp. unsalted cashews, toasted
  • 4 scallions, cut into ½-in. pieces
  • ¾ cup radishes, trimmed and quartered
  • 1 tbsp. ginger, minced
  • 1 tbsp. reduced-sodium soy sauce
  • 1 tbsp. rice vinegar
  • 1 tsp. chili-garlic sauce
  • 2 tsp. toasted sesame oil

Directions: 

Combine soy sauce, vinegar, and chili-garlic sauce in a small bowl. Heat oil in a large skillet over medium-high heat. Add ginger. Cook until fragrant, about 30 seconds. Add snow peas, radishes, and scallions. Cook, stirring frequently, until peas are tender, about 2-4 minutes. Add the sauce and stir to coat. Remove from heat and stir in cashews.
