Homemade Coconut Granola Cereal

Stop buying pre-made cereal from the grocery store. Even the cereals that claim to be healthy are loaded with sugar and processed ingredients. This recipe for homemade granola makes for an excellent cereal substitute. Serve this recipe for breakfast with fresh fruit for a filling morning meal.


  • 3 cups old-fashioned oats
  • 3/4 cup shredded sweetened coconut
  • 1/4 cup vegetable oil
  • 6 tbsp. pure maple syrup
  • 6 tbsp. (packed) brown sugar
  • 2 tbsp. hot water
  • 3/4 tsp. cinnamon
  • 3/4 tsp. salt
  • canola cooking spray
  • 1 banana, cut into 1/4 inch slices
  • 1/4 cup blueberries


  1. Preheat oven to 250 degrees.
  2. Coat a rimmed baking sheet with cooking oil and set aside.
  3. In a large bowl, combine oats and shredded coconut.
  4. In a separate bowl mix brown sugar, maple syrup, oil, salt, cinnamon, and water until combined.
  5. Pour the wet mixture over the oats and mix well.
  6. Spread the mixture evenly on the baking sheet
  7. Bake for an hour or until the cereal becomes evenly browned.
  8. Let the cereal cool completely.
  9. For a nutritious breakfast, top 1/2 cup cereal mixture with the blueberries and banana bites.
