Creamy Cauliflower and Chive Mashed Potatoes

This side dish is so creamy and savory, your guests will not believe you when you tell them they're eating cauliflower. Combine the fluffiness of pureed cauliflower with the richness of cream cheese and bullion and you have the most perfect and delicious substitute to overly heavy mashed potatoes.

Cook time: 6 minutes
Ingredients:
- 1 medium head cauliflower, small florets
- 1 tbsp. cream cheese, softened
- 1/4 cup grated Parmesan
- 1/2 tsp. garlic, minced
- 1/8 tsp. bullion
- 1/8 tsp. freshly ground black pepper
- 1/2 tsp. chopped fresh or dry chives, for garnish
- 3 tbsp. unsalted butter
- Black pepper to taste
Directions:
Bring a large pot of water to a boil. Cook the cauliflower for 6 minutes until fully cooked. Drain but do not cool. Pat dry with paper towels carefully but thoroughly. In a food processor or blender, puree the cauliflower, cream cheese, garlic, Parmesan, bullion, and pepper to taste. Scrape the sides and continue to blend until smooth. Serve with butter and garnish with chives.
