Carrot Hummus

This carrot hummus recipe takes traditional hummus ingredients and incorporates a few new ones to increase your beta carotene and fiber intake. Pre-packaged hummus may contain added preservatives or unknown chemicals to your delicious treat. Instead, try making this easy to follow, five minute recipe for a yummy homemade snack!

Carrot Hummus

Serves: 6 to 8

Total Time: 5 minutes prep plus 1 hour cool time


1 C. carrots, peeled and chopped

1 15-oz. can of garbanzo beans

1/4 C. tahini

2 tsp. lemon juice

2 garlic cloves

1/2 tsp. ground cumin

1/4 tsp. salt


In a small saucepan, cook the carrots in boiling water for 6 to 8 minutes. Drain carrots and combine with all other ingredients in to your food processor. Blend until the mixture is smooth and transfer to a serving bowl.  Stir in two tbsp. or fresh parsley, if desired. If the mixture is too thick, stir in water until desired consistency is achieved.

Cover and chill your hummus for at least one hour. Serve with carrots, broccoli, peppers, pita chips, or add it to your favorite sandwich!
