Winter Warm-Up Pumpkin Soup

Pumpkin season is a fall and winter staple, and we couldn't be happier! Sure,  you could make a Jack-O-Lantern, but why not utilize this time to make a multitude of tasty, pumpkin recipes. Pumpkin soup will keep you warm during the coldest of days. 


  • 6 cups of chicken stock 
  • ½ tsp. of salt
  • 4 cups of pumpkin puree
  • 1 tsp chopped fresh parsley 
  • 1 cup of chopped onion 
  • 1/2 tsp. chopped fresh thyme
  • 1 clove of minced garlic 
  • 1/2 cup of heavy whipping cream
  • 5 whole peppercorns


  1. Add chicken stock, salt, pumpkin, onion, thyme, garlic, and peppercorns in a pot
  2. Bring pot to a boil and reduce heat to low
  3. Allow to simmer for 30 minutes uncovered
  4. Puree soup in small batches using a food processor (1 cup at a time)
  5. Return soup to put and bring to a boil
  6. Reduce heat and allow to simmer again for 30 minutes.
  7. Stir in heavy cream and simmer for 10 mins
  8. Garnish with fresh parsley and enjoy!
