Easy Baked Chicken Chimichangas

One of the best things about Chimichangas is the toppings! So, go crazy—just make sure you are using low-fat and fresh options. 

Easy Baked Chicken Chimichangas

Serves: 4

Total time: 30 minutes


2 C. cooked chicken, chopped

1 C. store bought picante salsa

1 tsp. ground cumin

1 C. low-fat cheddar cheese, shredded

1/3 C. green onions, chopped

½ tsp. salt

6 8-inch flour tortillas

2 Tbs. butter, melted

Preheat oven to 450 degrees. 

Lay out tortillas on a work surface. Brush one side with the melted butter. Flip over. 

In a saucepan over medium heat combine chicken, salsa, cumin onions and salt and simmer for about 5 minutes. Remove from heat. 

Place about 1/3 cup of the mixture on to the unbuttered side of the tortilla. Top each tortilla with about 2 Tbs. of cheese. Fold two opposite sides of the tortilla over. Then fold the ends over. Place the filled tortillas seam side down onto a baking dish. Repeat with the remaining tortillas. Place in the oven and bake for about 15 minutes or until the tortilla is crisp and golden brown. 

Remove from the oven, top with desired toppings, serve and enjoy!
