Lunches We Love: Tuna and Tomato-Stuffed Pita

Here's a simple lunch recipe that is great to take to work! It incorporates salad and edamame, that is then stuffed into a pita shell. Try it out for yourself!

Ingredients:

  • Spring greens mix
  • 1 3 oz. can of tuna, drained
  • 1 tbsp. vinaigrette
  • 1/4 cup cherry tomatoes
  • 1 whole-wheat pita

Directions:

  1. Toss spring mix, tomatoes, and vinaigrette to combine.
  2. Stuff the lettuce mixture inside a pita.
  3. Then stuff tuna on top, and enjoy!
