Ceviche is a delicious dish for the summer. It’s fresh, healthy, and leaves room for variation. It’s perfect to add into tacos, make into a party dish, or serve in a martini glass for a creative appetizer.
Ingredients:
- 6 12oz bags of frozen, cooked large shrimp (thawed & tail removed)
- 1/4 cup tequila
- 6-8 lemons, freshly squeezed
- 4 large jalapenos, diced
- 3 tomatoes, diced
- 1 bunch chopped cilantro
- 1 red onion, diced
- salt & pepper to taste
- 1/2 cup avocado, diced
- 4-6 freshly squeezed limes
Directions:
Place all ingredients in a large bowl, and mix well! Refrigerate for a few hours and enjoy!
