Wild Rice Muffins

Try one of these muffins for breakfast!

Ingredients
* 1/2 C. wild rice
* 1 1/4 C. water
* 1 C. milk
* 2 eggs, beaten
* 5 Tbs. melted butter
* 1/2 tsp. salt
* 2 tsp. baking powder
* 1 1/2 C. flour
* 2 tsp. sugar

Directions

Soak the wild rice in water overnight, drain and wash well. Preheat the oven to 400 degrees. Cook the rice in the water for 35 minutes. Drain. Beat the rice with milk, beaten eggs and melted butter. Sift the salt, baking powder, flour and sugar into the batter and mix lightly. Pour the mixture into greased muffin tins and bake in the preheated oven for 25 minutes.
