Lemon Rosemary Fries

Lemon Rosemary Fries

French fries may not be the healthiest snack, but a small serving of these thin and crispy fries isn't going to hurt. We love that they're made with lemon salt, which completely changes the flavor and is nothing like the greasy fries you're used to eating.

zest of one lemon
4 Tbs. sea salt
sunflower oil
1 3/4 lb. potatoes, peeled and julienned
few sprigs of rosemary

  1. To make the lemon salt, grind the lemon zest and salt together in a mortar and pestle.
  2. Heat 3 inches of oil in a pan to 350 degrees.
  3. Start frying the potatoes in small batches. Cook for 1-2 minutes until golden brown and crispy.
  4. Add the springs of rosemary for the last 30 seconds of frying.
  5. Remove potatoes and rosemary from oil and transfer to a paper towel to soak up excess oil.
  6. Place in a large bowl and toss with lemon salt.
  7. Serve immediately.
