Mango Apricot Strawberry Smoothie

This refreshing smoothie is perfect for a hot summer day. The use of low-fat yogurt and milk keeps the calorie count down.


* 2 medium mangos, peeled, pitted and coarsely chopped
* 4 ripe apricots, pitted and coarsely chopped
* 1/2 C. ripe strawberries, hulled and coarsely chopped
* 1 C. plain low-fat yogurt
* 1 C. low-fat milk
* 2 Tbs. fresh orange juice
* 1/2 tsp. vanilla
* 4 whole strawberries, hulled (for garnish, optional)


Combine chopped mango, apricots, strawberries, yogurt, milk, orange juice and vanilla in the jar of a blender. Process until mixture is smooth. Divide mixture between 4 large margarita glasses. If desired, garnish each glass with a whole strawberry.
