Fruit Muffins

Fruit Muffins

Made with oat bran, soy, and egg substitute, these fruit muffins are super-healthy.


  • 2 C. flour
  • 1 Tbs. baking powder
  • 1/2 tsp. salt
  • 1/2 C. oat bran flakes
  • 1 Tbs. egg substitute
  • 1/3 C. sugar
  • 1/3 C. vegetable oil
  • 1-1/4 C. soy milk
  • 1-1/2 C. frozen fruit (rinsed, drained)


Preheat oven to 375 degrees. Grease muffin pan. Rinse and drain fruit. Combine dry ingredients in medium mixing bowl. Whisk wet ingredients in large bowl and add fruit. Add dry ingredients to wet ingredients and mix just until combined. Spoon into greased muffin pan. Bake for 25 minutes. Remove muffins from pan and cool on rack
