So-Good Cabbage Coleslaw

Coleslaw is a huge hit at any BBQ or outdoor meal. This cabbage coleslaw recipe uses low-fat cottage cheese instead of mayonnaise to make this delicious dish a little bit healthier. Try out this delicious cabbage coleslaw at your next get together.

•    1 cup red cabbage, shredded
•    ½ cup shredded carrot
•    ¼ cup cilantro, chopped
•    ½ cup low-fat cottage cheese
•    1 tbsp. vinegar

1.    Combine cabbage and carrots into a bowl and mix
2.    Pour in vinegar and low-fat cottage cheese and stir until ingredients are well combined
3.    Mix in cilantro
4.    Refrigerate for about 3 hours and serve

•    3 cups cabbage, shredded
•    2 lbs. beef, diced
•    2 potatoes, peeled and chopped
•    3 cups kidney beans
•    1 ½ cup beef broth
•    1/3 tsp. pepper
•    1 tsp. salt

1.    Place a large saucepan over medium heat
2.    Put beef on saucepan and allow beef to cook for about 12 minutes or until browned on all sides
3.    Pour beef broth and pepper over beef and cover the pan
4.    Allow the mixture to simmer for about 2 hours
5.    When done, add potatoes and celery and allow about 40 minutes more cook time
6.    Sprinkle with salt and serve
