Pickled Cabbage Casserole

This pickled cabbage casserole recipe delivers some great flavors, and adding beef to the mix makes this recipe stand-out even more. This quick and easy dinner idea is sure to please your guests. It’s simple to make and healthy to enjoy. 

•    3 cups red cabbage, shredded
•    3 potatoes, peeled and chopped
•    ½ lb. shredded beef
•    1 tbsp. parsley, chopped
•    2 celery stalks, chopped
•    1/3 cup apple cider vinegar
•    ¼ tsp. pepper

1.    Combine cabbage and potatoes in a large mixing bowl and set aside.
2.    In a pan over medium heat, pour in the vinegar and allow time to simmer.
3.    Once simmered, pour the vinegar over the cabbage and potatoes and stir.
4.    Let the mixture sit for a 1 hour.
5.    In a pan over high heat, place in beef and allow about 12 minutes of cook time or until all sides are browned.
6.    After the hour is over, mix in the parsley, celery, beef, and pepper into the mixing bowl. Serve.
