Kale Egg Salad

Egg Salad with Kale

This kale and egg salad is easy to make and is very filling. Eggs are a great source of protein and the taste combines really well with the flavor of kale. This salad can be eaten as its own meal or can be served as a side to a full dinner.


·     3 eggs

·     2 tomatoes, sliced

·     2 cups kale. chopped

·     1 cup red cabbage, shredded

·     1/3 cup corn off the cob

·     2 carrots, shredded

·     2 tbsp. extra virgin olive oil

·     Water


1.     Combine tomatoes, kale, cabbage, corn, and carrots in a large bowl and mix thoroughly

2.     Add olive oil and begin to toss salad, set aside when done

3.     Bring a pot of water to a boil

4.     Carefully drop eggs into the boiling water

5.     Watch eggs and remove when they are hard boiled

6.     Remove the shells of the eggs and slice into thirds

7.     Add eggs to the bowl of vegetables

8.     Serve with preferred dressing
