Kale Zucchini Casserole

A vegetable casserole that’s full of flavor!

What you’ll need:

  • 30 oz canned diced tomatoes
  • 30 oz canned tomato sauce
  • 1 bunch kale, chopped
  • 1 cup cheddar cheese (or any low-fat cheese of your choice)
  • 2-3 large zucchini, sliced
  • Nonstick oil spray

Preheat oven to 350F. Spray casserole with the oil. Layer the vegetables: diced tomatoes on the bottom; kale in the middle; zucchini on top. Pour the tomato sauce. If you have ingredients left, repeat the layers until you use up all the ingredients. Add the cheese last. Bake for 30-40 minutes, or until thoroughly cooked; then broil on high for 1-3 minutes to brown the cheese.
