Ingredients
• 1 lb. boneless chicken breast, diced
• 2 carrots, sliced
• 1/3 cup string beans, chopped
• 1/4 cup peas
• ¼ cup corn
• 1 cup white rice
• 3 tbsp. extra virgin olive oil
• 2 tbsp. low sodium soy sauce
• Water
Directions
1. Pour water into a pot over high heat and allow it to come to a boil
2. Place rice in boiling water and allow rice to cook until tender, about 10 minutes
3. Place a large skillet over medium heat
4. Pour olive oil onto skillet and place chicken
5. Stir chicken and allow cook time of about 2 minutes
6. Remove chicken and set aside
7. Place vegetables into the same pan
8. Stir vegetables allowing them to cook for about 2 minutes
9. After 3 minutes, add chicken back into the pan
10. Pour soy sauce over mixture and cook for 1 minute
11. Serve stir fry over rice
