This healthier alternative to Eggs Benedict is just as delicious as its heavier counterpart. Feel free to skip the Hollandaise sauce in favor of a healthier alternative. You can still enjoy this creamy delight while cutting out much of the guilt.
Ingredients
- 2 eggs
- 1 whole-wheat toast
- 1 Wedge Light Garlic & Herb Cream Cheese
- 1 slice turkey bacon
Directions
- Fill a small saucepan with water and place on burner. Place eggs in poacher; place in pan for poaching. Toast the whole-wheat slices. Place bacon inside a paper towel and microwave for approximately one minute or until desired crispness.
- When bread is toasted, divide the cream cheese and spread over toast. Put the bacon on a piece of toast. When the eggs are finished poaching, remove from poacher and place onto toast in an over-easy fashion (flipped over) and serve.
