This classic cherry pie recipe, handed down from my mom, is a family favorite. With its bubbling, rustic appearance and deliciously sweet filling, it’s no wonder everyone fights over the last slice. Ingredients
- 1 can (14.5 oz) pitted red tart cherries in water
- 2/3 cup granulated sugar
- 1/2 package (3 oz) vanilla cook-and-serve pudding/pie filling, dry
- 2 pie crusts (homemade or pre-made)
Directions
- Prepare the Cherry Filling:
- Drain the juices from the can of cherries into a small saucepan.
- Stir in the sugar and dry vanilla pudding/pie filling mix until the sugar is completely dissolved.
- Bring the mixture to a simmer over medium heat, stirring constantly, until it thickens. This usually takes a few minutes.
- Assemble the Pie:
- Preheat your oven to 450°F (230°C).
- Place the drained cherries into one of the pie crusts in your pie dish.
- Pour the thickened filling over the cherries.
- Create the Lattice Crust:
- Roll out the second pie crust and cut it into 1/2-inch strips.
- Arrange the strips in a lattice pattern over the top of the pie filling. To create the lattice, lay the strips horizontally over the filling, then weave additional strips vertically through the horizontal strips, creating a crisscross pattern.
- Bake the Pie:
- Bake in the preheated oven at 450°F (230°C) for 15 minutes.
- Reduce the temperature to 350°F (175°C) and continue baking for an additional 30 minutes, or until the crust is golden brown and the filling is bubbly.
- Cool and Serve:
- Allow the pie to cool completely before serving. This will help the filling set and make slicing easier.
Storage
Store the pie at room temperature for up to 2 days. For longer storage, cover the pie and refrigerate for up to 1 week. You can also freeze the pie for up to 3 months; let it thaw in the refrigerator before serving.
