This comforting soup is easy to prepare and can also be modified with whatever vegetables are in season! This recipe uses mixed frozen vegetables, but go ahead and use fresh ones! Simply cut each vegetable into similar sized pieces.
What you’ll need:
- 1 pound ground beef
- 1 small onion, diced
- 1 teaspoon garlic, minced
- 1/2 (6 ounce) can tomato paste
- 1 28-ounce can crushed tomatoes
- 1 envelope onion soup mix
- 2 beef bouillon cubes
- 1 bay leaf
- 1 16-ounce package frozen mixed vegetables
- 2 quarts water
- 2/3 cup orzo pasta
- Salt and pepper
Cook the ground beef over medium heat for 7 to 10 minutes or until completely browned. Drain as much fat from the beef as possible. Stir in the onion and garlic and cook for 5 minutes or until the onion has softened. Add the tomato paste, crushed tomatoes, onion soup mix, beef bouillon cubes, bay leaf, mixed vegetables, and water. Increase heat to medium-high, and bring the soup to a boil. Stir in the orzo pasta and cook until the orzo is tender, about 10 minutes. Season with salt and pepper.
