Enjoy with your tea for a light breakfast or snack!
What you’ll need:
- 1 1/2 c. oat bran
- 1 1/2 c. flour
- 1/3 c. brown sugar
- 2 tsp. baking powder
- 1 tsp. cream of tartar
- 1/3 c. butter
- 1 egg
- 2 egg whites
- 1/3 c. lowfat plain yogurt
- 1 tsp. vanilla
- 1 c. raisins
Preheat oven to 400 degrees. Mix together the dry ingredients; in a separate bowl, beat the egg and egg whites, and then stir in the butter, yogurt and vanilla. Make a crater in the dry mix and pour the liquid mixture; add the raisins and fold the ingredients together to make the dough. Place the dough on a cookie sheet and roll flat into a 10-inch circle. Use the top of a glass to cut 2- to 3-inch smaller circles. Remove the scraps. Bake for 20-25 minutes.
