Bruschetta is a perfect summertime snack. It’s refreshing, delicious, and healthy. If you avoid bruschetta because you don’t want to eat the bread, then swap it out for crackers! I’ve been eating mine with Wheat Thins lately and it’s just as good.
- 4 plum tomatoes diced
- 1 tablespoon balsamic vinegar
- 1 teaspoon olive oil
- 1 clove minced garlic
- a couple fresh basil leaves chopped
Remember when I said it would be easy? I wasn’t lying. Mix all the ingredients together and serve with either a baguette or crackers.
