Protein Overload: Avocado and Egg Toast

You’ve probably heard the phrase, “breakfast is the most important meal of the day,” a few too many times before. I’m one of those people who claims I don’t have enough time for breakfast in the morning, yet I have time to stop for a large coffee. 

Since I know I need to start eating breakfast more often, I decided to look for recipes that would make me want to eat it. Last week I came across this breakfast recipe, and I decided to give it a try. This egg and avocado toast honestly takes about three minutes to make, and gives you a HUGE protein boost. I love avocados, but I never really thought about having one for breakfast. Here’s how to put this easy meal together:

Make one egg (I like mine over-easy, but scrambled work too!)

Spread about half an avocado on a piece of toast.

Add the cooked egg on top and enjoy!
