Tofu and Bell Pepper Stir-Fry

  • 1 1/2 tablespoons soy sauce

  • 6 ounces extra-firm tofu, drained and cubed
  • 1/8 cup water
  • 1/2 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 4 ounces sugar snap peas
  • 2 red or green bell peppers, diced
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, minced and peeled
  • 2 green onions, diced diagonally

Directions:

  1. Marinate Tofu: In a medium-sized bowl, mix the soy sauce, vinegar, honey, sesame oil, and red pepper flakes. Add the cubed tofu and marinate for 30 minutes. Drain the tofu and reserve the marinade.
  2. Prepare Sauce: Combine the cornstarch and 1/8 cup water in a small bowl and stir until dissolved. Add this mixture to the reserved marinade and set aside.
