Sugar-Free No-Bake Fruit Bars

Enjoy these fruit bars without adding extra sugar to your diet! Since it’s no bake, you won’t have to heat up your house on a hot summer day either. We added our favorites – raspberries and blueberries – but it works with an assortment of delicious fruits!

Ingredients:

  • 1/2 cup + 2 tablespoons whole wheat bread crumbs
  • 1/8 cup better, melted
  • 1/2 cup + 1 tablespoon Splenda
  • 4 oz. cream cheese
  • 1/4 teaspoon vanilla extract
  • 1/2 cup whipping cream
  • 1/2 cup blueberries
  • 1/2 cup raspberries

Directions: 

Mix crumbs, butter and 1 tablespoon Splenda into 8×8 baking pan. Chill 1 hour. In a large bowl, beat whipping cream until fluffy. Combine cream cheese, vanilla and rest of Splenda. Mix well. Fold the whipped cream in to the cream cheese mix. Pour blueberries and raspberries. Cover with waxed paper. Freeze for 30 minutes. Cut into square and freeze overnight.
