Turkey Burgers

Mozzarella-Stuffed Turkey Burgers

With 300 calories and 28 grams of protein, our mozzarella-stuffed turkey burgers, paired with a side dish of vegetables, would make for a deliciously healthy dinner.

Yield: 4 burgers

Ingredients:

For the marinara sauce:

  • 2 tsp. extra-virgin olive oil
  • 1 small onion, finely chopped
  • 4 cloves garlic, minced
  • 2 cups plum tomatoes, chopped
  • 6 oil-packed sun-dried tomatoes, drained and finely chopped
  • 2 tbsp. fresh basil, chopped
  • ½ tsp. kosher salt
  • ½ tsp. ground pepper

For the burgers:

  • 1 lb. lean ground turkey
  • ¼ cup scallions, finely chopped
  • 2 tsp. garlic, minced
  • 2 tsp. Worcestershire sauce
  • ½ cup shredded mozzarella cheese, divided
  • 2 tsp. extra-virgin olive oil
  • 2 tbsp. fresh basil, chopped
  • 1 tsp. lemon zest, grated
  • ½ tsp. dried oregano
  • ½ tsp. kosher salt
  • ½ tsp. ground pepper
  • 4 4-inch square slices focaccia bread, toasted

Directions:

For the marinara:

Heat the oil in medium saucepan over medium heat. Add onion and garlic, cover to cook. Stir frequently for about five minutes or until translucent. Stir in tomatoes with any juices, sun-dried tomatoes, salt, and pepper. Bring to a simmer and cook, stirring occasionally for about 10 minutes. Stir in basil and remove from heat. Transfer to a food processor and pulse to form coarse-textured sauce. Return to pan and set aside.

For the burgers:

Place turkey, scallions, garlic, Worcestershire sauce, lemon zest, oregano, pepper, and salt in a large bowl. Gently combine until evenly mixed. Form into 8 thin patties. Combine ¼ cup cheese and basil and place an equal amount in the center of 4 patties. Cover with the remaining patties and crimp the edges closed. Preheat grill to medium-high and oil the grill rack. Grill the patties, turning once, for roughly 10 minutes. Warm the marinara on the stove. Spread 3 tbsp. of marinara on each toasted focaccia, top with a burger, add another 3 tbsp. of marinara, and top it off with 1 tbsp. of the remaining cheese.
