Embossed Shortbread Cookies

These delicate tea cookies are made extra fine with a blend of rice flour and sweet rice flour. These cookies are simple but a time-tested classic favorite. Emboss these cookies with a beautiful design to make them extra special. You can serve these cookies to guests or gift to friends.

  • 1 1/3 cup white rice flour
  • 1/2 cup sweet rice flour
  • 1/2 cup cornstarch
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 1/4 tsp. xanthan gum
  • 14 tbsp. unsalted butter
  • 3/4 cup granulated sugar
  • 1 tsp. vanilla


Preheat the oven to 300 degrees. Cover a baking tray with parchment paper and put aside. In a large mixing bowl, combine rice flour, sweet rice flour, cornstarch, baking powder, xanthan gum, and salt. In a separate bowl, use a mixer to cream butter, sugar, and vanilla together (do not over mix). As soon as combined, add dry ingredients gradually. Sprinkle a little rice flour over a working surface and roll out the dough to 1/4 inch thickness. Using a round cutter, cut out cookies and place 2 inches apart on the tray. Either use an embossed rolling pin to create a design, or press in a design yourself. Bake for 30 minutes or until lightly golden around the edges. Serve with tea and jam.
